Cookin' for Idiot's...
Delightful and easy meals for the illiterate cook No matter what your Momma may have told you, cooking is not a chore nor is it hard. Hell we all love to eat...right?...We all know what pleases our taste buds, although I have run into a few individuals who like burnt toast. Anyway I am here to help you become at least a slow reader when it comes to cooking and in time you may progress to a master of the art without realizing it.


There are some fantastic resturaunts around these days. Especially if you live where I do. The few gripes I have about resturaunts are that once you leave their establishment, not only is your wallet much lighter, but you don't know if the cook had a bad day and a runny nose....EWWWW!.....talk about an oyster sandwich. When you learn how to prepare a meal with enough flare and pizazz to raise the most finiky eaters eyebrows, you will also learn that cooking at home won't drain your wallet.

Cooking is easier than you think....and cheaper than going out

This week's easy to do meal: Melt in your Mouth Chicken This meal is so danged easy, those you love will love you more, and those that don't may want to after they eat this.

needed items:
1 pkg of chicken legs..at least 10 peices...you can use other cuts as well
butter
ground red pepper
salt& pepper
chopped parsley...fresh or McCormick
chopped basil..........."
chopped onion..........."
1 can of chicken broth
1 can of roasted garlic and potato soup....Campbell's Brand
milk
an 8"x10" cassarole dish

Now here's the easy part...

Preheat oven to 350 deg F.
add about half the can of chicken broth...maybe a little less than half
add in the roasted garlic and potato soup and fill the can with milk...add it too..stir till well mixed in pan.
place chicken legs in dish.
sprinkle generously with ground red pepper.....don't worry it won't be hot
add at least a 1/3 cup of each of the parsely, basil, and onion
place a tablespoon of butter at each corner of the dish...I didn't say this was a non-fat dish.....
place dish in oven
Set the timer for 1 hour and 30 minutes
"Sit back and enjoy a nice beverage of your choice."

While the main course is cooking you need to decide what you want with it.
My personal opinion is a nice green vegetable like fresh cut asparagus or broccoli, and either white rice or mashed potatoes. Cornbread is a nice touch, Marie Callenders sells a mix that is damn good.
